Chocolate Peanut Butter Gooey Cake
This delicious and decadent chocolate lava cake it simply too moreish to be true. Not for the faint hearted, it has all the yumminess of a rich chocolate fondant yet laced with the distinctive flavours of chewy dates and sticky peanut butter. It is ideal served piping hot accompanied with vegan vanilla creamy ice cream.
Ingredients:
‣ 1 cup of almond flour
‣ 1 cup of cocoa powder
‣ 3 tablespoons of ground flaxseed
‣ 2 drops of vanilla extract
‣ ½ cup of agave
‣ ½ teaspoon of bicarbonate of soda
‣ 1 teaspoon of baking powder
‣ 1 cup of oat milk
‣ 6 medjool dates (pitted and sliced in half)
‣ 1 tablespoon of sunflower seeds
‣ 2 tablespoons of peanut butter
Method:

Mix all dry ingredients together and then add the wet ingredients to the bowl (all except for the dates, seeds and peanut butter)

Pour a little of the mixture to cover the bottom of your earthenware or pyrex

Add a layer of cut dates on top of the chocolate mix base

Then sprinkle the sunflower seeds on top of the date layer

Finally pour over the remainder of the chocolate mix making sure to cover all the sides

Place in a preheated oven at 180 degrees Celsius for 20 minutes

The cake will rise and should be soft in the center

Serve hot with vegan ice cream or alone.
